Wingman Metrics
Walking into Ash at the Iron Horse Hotel, the wine list feels like an extension of the room — warm, polished, and leaning hard into California. It's not trying to impress you with obscure picks; it's trying to make sure you have a good bottle with your wood-fired dinner, and mostly it succeeds.
The list runs 100-150 bottles with a clear West Coast identity: Napa Cabernet, Sonoma Coast Pinot Noir, and California Chardonnay anchor everything. Serious producers like Ridge Vineyards, Stag's Leap Wine Cellars, and Jordan Winery show up, which tells you someone made real decisions here rather than just phoning in a hotel list. The gaps are real though — old-world representation is thin, and if you're hunting for anything outside California, you're mostly out of luck. Wine Spectator handed these folks an Award of Excellence starting in 2022, and it tracks: this is a focused, competent list that knows what it is.
The by-the-glass program runs 12-18 options at $12-$18, which is honest pricing for a hotel restaurant in Milwaukee. It mirrors the bottle list — California-forward, reliable producers, nothing that's going to blow your mind but nothing embarrassing either. Rotation doesn't appear to be aggressive, so don't expect surprises visit to visit.
Jordan Winery Cabernet Sauvignon, Alexander Valley — $40-range bottle
Jordan consistently punches above its price class — structured, food-friendly, and approachable enough that your whole table can enjoy it without a wine debate. At the lower end of Ash's bottle range, it's the move.
Ridge Vineyards Sonoma Coast
Most people at a hotel restaurant grab the familiar Napa Cab and call it a night. Ridge is doing something more interesting — earthy, precise, and built for a table full of wood-fired food. It's the pick that makes you look like you know something.
Stag's Leap Wine Cellars Cabernet Sauvignon
Stag's Leap is a legendary name and the markup reflects it. You're paying for the reputation more than the experience at this price point — save that spend for a bottle shop where the margin isn't working against you.
Sonoma Coast Pinot Noir + Wood-fired small plates
The smoke and char from Ash's hearth cooking needs a wine with enough fruit to hold its own but enough acidity to cut through. Sonoma Coast Pinot Noir does exactly that — it doesn't fight the fire, it plays with it.
✔️ The Bottom Line
Ash is a reliable, California-centric wine program that earns its Wine Spectator nod without overreaching. Send a friend here if they want a good bottle with a great meal — just tell them to stick to the West Coast and avoid the trophy bottles.
