Three hundred to five hundred selections sounds impressive, and Bob's delivers a deep bench of California heavy-hitters — Caymus, Silver Oak, Opus One, Jordan, Stag's Leap, Beringer Private Reserve, Far Niente, Duckhorn. The list is California-forward to a fault, which is perfectly fine when that's the mission, but don't show up hoping to drink your way through Burgundy or the Rhône. What's here is well-curated and properly stored, and the presence of named sommeliers Royce Vick and Jeff Whiffin means someone is actually minding the cellar. It's a legendary wine and Bob's will happily charge you legendary prices for it. At a restaurant markup, you're paying a significant premium over retail for something you could open at home for the occasion it deserves. Save Opus One for somewhere it gets the ceremony it warrants.
