First Impression
The list lands on your table like a small novel โ 400 to 600 bottles deep, heavy on California cult cabs and French classics, with enough Italian firepower to keep things honest. This is a room that takes wine seriously, and the list backs that up before you've even ordered bread. Wine Spectator handed them a Best of Award of Excellence in 2025 for a reason.
Selection Deep Dive
California is the star here, and Bohanan's leans into it hard โ Caymus Special Selection, Stag's Leap CASK 23, Kistler, Far Niente, Jordan, Silver Oak, Opus One, and Beringer Private Reserve all make appearances, which reads like a greatest-hits tour of Napa and Sonoma. France holds its own with Chateau Margaux and Lynch-Bages anchoring the Bordeaux section, giving the trophy wine crowd something to chase. Italy gets real love too โ Tignanello and Sassicaia are exactly the kind of selections that separate a serious list from a hotel steakhouse checklist. The gaps are real: don't come looking for Burgundy depth, natural wine, or anything off the beaten path.
By the Glass
Twenty to thirty-five pours by the glass is a generous program for a steakhouse of this size, and it gives you room to explore without committing to a bottle. We'd expect the heavy-hitters to anchor the glass list โ cabs, chardonnays, and the usual suspects โ though rotation and adventurousness aren't hallmarks of a list this classically minded. It's a strong program by the glass, just don't expect surprises.
Jordan Vineyard & Winery Cabernet Sauvignon โ $~80
Jordan is the rare California cab that shows restraint and elegance without asking you to take out a second mortgage. In a room full of trophy bottles, it's the move that drinks above its price point and goes straight at the ribeye.
Chateau Lynch-Bages
Most tables here are scanning for California and ignoring the Bordeaux section entirely. That's a mistake. Lynch-Bages is a Pauillac that punches with Margaux-adjacent class at a fraction of the grand cru price, and it absolutely sings next to a dry-aged bone-in ribeye.
Caymus Vineyards Special Selection Cabernet Sauvignon
Caymus Special Selection is the default order for people who haven't looked past the first page of the list, and restaurants like this know it โ markup reflects demand. At a steakhouse with Stag's Leap CASK 23 and Opus One on the same card, there are better ways to spend your money.

CASK 23 is one of Napa's benchmark cabs โ structured, precise, with the kind of dark fruit and grip that doesn't flinch at a ribeye with serious char on it. This is the pairing the list was built for.
