The list at Capa lands with the confidence of a restaurant that knows exactly what it's doing — Spanish spine, serious depth, and a by-the-glass program that punches well above its zip code. This isn't a hotel wine list running on autopilot.
Selection Deep Dive
The 350-500 bottle list is anchored in Spain — Rioja, Ribera del Duero, and Priorat get serious treatment with names like CVNE Imperial Gran Reserva, Muga Prado Enea, and Alvaro Palacios L'Ermita. Italy and France show up in force too, with Sassicaia, Tignanello, and Château Margaux covering the prestige bases without feeling like a hotel vanity list. California gets its own chapter — Opus One, Caymus Special Selection, and yes, Screaming Eagle for those who need to see the name on the table. Sassicaia Super Tuscan 2020
At $65, this is one of the most storied bottles in Italian wine sitting at a price that most people will walk past in favor of something more familiar. Sassicaia built the Super Tuscan category — this is the original, and at this price point it's a steal compared to what you'd pay at a comparable fine dining room.
Caymus Vineyards Special Selection Cabernet Sauvignon
Caymus Special Selection is everywhere, costs a lot, and the markup at this level of restaurant rarely makes it worth it when the same money gets you into Opus One territory or something far more interesting on this list. It's the safe choice for people who haven't looked past the first page.
CVNE Imperial Gran Reserva Rioja + Jamón Ibérico de Bellota
Imperial Gran Reserva is all dried fruit, leather, and earthy depth — exactly the flavor architecture that Jamón Ibérico de Bellota wants next to it. The fat in the ham softens the wine's tannins and the wine's age amplifies the nuttiness in the pork. This is the pairing you came to Capa to make.
