Tucked inside the Chateaux at Deer Valley, Cena's wine list punches well above what you'd expect from a resort restaurant where the default move is to slap Kendall-Jackson on the list and call it a day. The Italy focus is real and deliberate โ this isn't a token Chianti situation. The copper-topped bar and slope views set the scene; the wine list actually backs it up.
The 150-250 bottle list leans hard into Italy, and that's exactly where it should be leaning. Piedmont and Tuscany anchor the program โ Barolo, Brunello di Montalcino, Chianti Classico Riserva, and Super Tuscans in the Sassicaia and Tignanello style give the list real credibility. Alto Adige Pinot Grigio shows up as the smarter-than-usual white option, a far cry from the watered-down stuff that usually fills resort wine lists. Amarone rounds out the heavy hitters. What's missing is depth outside Italy โ if you're not in an Italian mood, the list thins out fast.

Amarone is always a steep buy at a resort restaurant โ the category already commands high prices at retail, and Deer Valley zip codes don't make it cheaper. You're paying a significant premium for the drama of the name. The Barolo or Brunello will give you more for your money in this context.
