You walk into Coiled expecting a modest tasting room and instead find a genuinely focused wine program built entirely around what Idaho and the Snake River Valley can actually do. The list is tight — no filler, no obvious crowd-bait — and that confidence is immediately refreshing. This isn't a restaurant that bolted a wine list onto a menu; the wine IS the point.
Coiled keeps the list disciplined: their own production anchors everything, with Snake River Valley Riesling, Syrah, Cabernet Sauvignon, and Petit Verdot doing the heavy lifting alongside a Willamette Valley Pinot Noir that shows they're paying attention to what grows well where. The Black Mamba Red Blend and the Sidewinder Syrah are house standouts that punch well above their price point. You won't find a sprawling Old World section here, and that's fine — the focus is the feature. The gap is obvious if you want Burgundy or Barolo, but that's not what Coiled is selling, and they're honest about it.

Retails for $20, so the 50% markup is about as fair as wine bar math gets. Snake River Valley Riesling is legitimately interesting — high desert growing conditions produce a taut, mineral-driven style that most people have never encountered. At $30 a bottle, this is the pick.
Coiled Wines Petit Verdot 2019
Most people skip Petit Verdot because they don't know what it is — in Bordeaux it's a blending grape, rarely the star. In Idaho's hot, dry Snake River summers it ripens fully and goes deep: dark fruit, firm structure, the kind of bottle that makes you reconsider what Idaho wine is capable of. Most tables walk right past it.
