You walk into Coiled expecting a modest tasting room and instead find a genuinely focused wine program built entirely around what Idaho and the Snake River Valley can actually do. The list is tight โ no filler, no obvious crowd-bait โ and that confidence is immediately refreshing. This isn't a restaurant that bolted a wine list onto a menu; the wine IS the point.
Coiled keeps the list disciplined: their own production anchors everything, with Snake River Valley Riesling, Syrah, Cabernet Sauvignon, and Petit Verdot doing the heavy lifting alongside a Willamette Valley Pinot Noir that shows they're paying attention to what grows well where.
