First Impression

The name isn't subtle, and neither is the intent — Corks is a neighborhood restaurant that leads with wine, not the other way around. The list reads like someone actually cared when they built it: there's geographic range, a few prestige bottles, and enough mid-range picks to make a Tuesday dinner feel considered. It's not trying to impress you with length, but what's here is purposeful.

Selection Deep Dive

California anchors the list with expected heavy hitters — Caymus Special Selection and Joseph Phelps represent the Napa crowd — but the presence of Domaine Serene's Evanstad Reserve signals that Oregon gets a real seat at the table here, not just a token pinot. New Zealand shows up with two Marlborough Sauvignon Blancs (Greg Norman Estates and Babich), France and Italy fill supporting roles, and Argentina rounds out the international spread. Domaine Serene 'Evanstad Reserve' 2019 Willamette Valley

Most tables at a place like this gravitate toward the Caymus and call it a night. The Evanstad Reserve is the better story — a benchmark Willamette Valley Pinot from one of Oregon's serious producers, and at $139 it's one of the more intellectually interesting bottles on the list. The people ordering it know what they're doing.

At $259, you're paying a significant premium for a bottle that's become more of a brand than a wine. The Special Selection is good — it's always good — but it's also one of the most over-ordered, over-allocated bottles in American restaurants. You can do better here for less.
