First Impression

You walk in expecting a charming Southern bistro and get slapped with a 250-label list that has no business being in Chattanooga β€” and we mean that as a compliment. The marble oyster bar sets the tone: this place takes itself seriously without being precious about it. Whatever you were planning to order, the wine list is going to change your evening.

Selection Deep Dive

The backbone is California and France, but there's real depth and range here — Cayuse 'Camaspelo' from Washington sitting next to Bodega Chacra from Patagonia next to a proper Chapuis & Chapuis Savigny-lès-Beaune tells you someone actually built this list with intention. The Burgundy section doesn't just wave at the region and move on, and the inclusion of Girlan from Alto Adige signals that Italy gets more than a token Pinot Grigio slot. High-end Napa is well represented — Shafer Hillside Select and Futo 'OV|SL' for the table that wants to spend — but the list earns its chops below that stratosphere too. The one gap: more Southern Hemisphere and Rhône depth would push this from great to genuinely elite.

By the Glass

Twelve-plus options with a range of $10–$23 a glass is a solid program β€” the Argyle Brut RosΓ© and Henriot Brut Souverain on the glass menu alone make this worth sitting at the bar. The Robert Sinskey 'Los Carneros' Pinot Noir by the glass is the kind of call that separates a real list from a hotel program. We'd love to see more rotation, but what's here is well above average for Tennessee.

Alto Adige Pinot Grigio is a world away from the flabby grocery-store stuff β€” it's crisp, mineral, and built for a raw bar. Girlan is a reliable co-op producer who consistently punches above its price point, and next to an oyster it's close to perfect.

Bodega Chacra 'Cincuenta y Cinco' - Patagonia

Most tables here are going straight for California or Burgundy and sleeping on this. Chacra's 'Cincuenta y Cinco' is made from 55-year-old Malbec vines in Patagonia β€” it's elegant, cool-climate, and nothing like the jammy Argentine Malbec people think they know. Order it and watch your dining companions get converted.

Shafer Hillside Select

One of Napa's iconic Cabernets, no question β€” but the markup on trophy bottles like this is where restaurants make their money back, and you're almost certainly looking at a significant premium over retail. If you want to drop that kind of money on a special occasion, we won't stop you, but your dollars go further elsewhere on this list.

Argyle '20 Brut RosΓ© - Willamette Valley + Tennessee Trout with Beurre Blanc

The Argyle Brut RosΓ© has enough acidity to cut through the richness of beurre blanc while its subtle red fruit doesn't overwhelm the delicate trout. Willamette Valley bubbles and a classic French preparation β€” it works because neither one is trying to dominate the other.
