Walking into Paley's Place, tucked inside a Victorian house on NW 21st, you get the sense that whoever built this wine list actually cares. The list runs 200-plus bottles deep and doesn't waste pages on obvious filler. It feels like a serious wine program wearing comfortable clothes.
