You walk into what looks like a bakery and leave having drunk a Domaine Edmond Cornu Pinot Noir from Burgundy β that's the Persephone move. The wine list is short enough to read in under a minute, but it earns every second of your attention. For a Jackson Hole cafΓ© that's primarily known for its sourdough, this is a genuinely surprising wine program.
Under 15 bottles, but they're doing more with that constraint than most full-service restaurants do with 60. The list sweeps through Catalunya, the Loire, Alsace, Burgundy, Modena, and South Africa β with a clear tilt toward European producers who farm thoughtfully. The Podere il Saliceto Lambrusco Pet Nat from Modena and the Kuentz-Bas Alsace Blanc signal that whoever built this list has actual opinions. The one glaring gap is any domestic representation, but honestly, given what they've chosen to stock instead, we're not complaining.
Six pours by the glass, which is a solid ratio for a list this size β essentially the whole menu is accessible without committing to a bottle. Options rotate through sparkling, rosΓ©, white, and red, so there's something for the croissant crowd at noon and the tartine crowd at 3pm. We'd like to see the pours rotate more seasonally, but what's here is genuinely well-chosen.
Domaine de Bernier Chardonnay, Loire, FR, 2012 β $24
Loire Chardonnay at $24 is a legitimate steal. This isn't the buttery, oaky California version β it's lean, mineral, and food-friendly in a way that works perfectly with cafΓ© fare. At that price point in Jackson Hole, it's practically giving itself away.
Podere il Saliceto Lambrusco Pet Nat, Modena, IT, 2014
Most people see 'Lambrusco' and think cheap Italian red fizz from a screw-top. This is the opposite β a serious Pet Nat from one of Modena's most respected natural producers. It's funky, food-friendly, and exactly the kind of thing you discover at a place like Persephone and then spend months trying to find at home.
Krone Sparkling RosΓ© (Pinot Noir, Chardonnay), SA, 2014
At $34, the Krone sparkling rosΓ© is the least interesting bottle on an otherwise interesting list. South African bubbly at that price competes against a lot of better options elsewhere on this very menu β the Suriol Cava Brut Nature does more for less, and the Pet Nat is a more compelling adventure.
Kuentz-Bas Alsace Blanc, Alsace, FR, 2014 + Seasonal tartine
Alsace Blanc β likely a blend of Pinot Blanc, Auxerrois, or similar β has the texture and subtle richness to hold up to whatever's on the tartine that day, whether it's something herby, creamy, or topped with smoked fish. It's a kitchen-flexible white, and Persephone's open-faced preparations are its ideal match.

Persephone is the best wine program in Jackson Hole you'd never expect to find inside a bakery. If you're in town and you're not stopping here for a glass and something from the pastry case, you're doing the trip wrong.
