First Impression
You walk into a bakery expecting coffee and a kouign amann, and then you clock a Domaine Edmond Cornu Burgundy on the wine list. That's the Persephone move β old-world fermentation ethos applied equally to the bread and the bottle. This is not a wine bar, but it's clearly curated by someone who drinks well.
Selection Deep Dive
The list is short but punches well above its weight for a bakery in Jackson Hole. France anchors the program with selections from the Loire, Alsace, and Burgundy β regions that reward attention and rarely show up on lists built to please ski tourists. Spain gets a nod with a Cava Brut Nature from Suriol, Italy contributes a Podere il Saliceto Lambrusco Pet Nat, and South Africa's Krone rounds out the sparkling section. There are real gaps β no reds outside of the Cornu Pinot, no deep-dive into any single region β but what's here reflects genuine taste rather than a distributor's default order.
By the Glass
With 8+ options by the glass, this is a strong pour program for a cafe setting. The selection skews toward sparkling and white, which makes complete sense alongside pastry and bread. Seeing a Loire Chardonnay from Domaine de Bernier and a Kuentz-Bas Alsace Blanc available by the glass at a bakery is quietly remarkable.

Most people see Lambrusco and think grocery store sweetness. This Podere il Saliceto version is the real deal β a pet nat with earthy depth and just enough fizz to make a Friday afternoon feel like an event.

At $34, the Krone is the weakest value proposition on the list. It's a perfectly fine South African bubbly, but when the Suriol Cava Brut Nature and the Lambrusco Pet Nat are both sitting right there, there's no reason to default to this one.
Kuentz-Bas Alsace Blanc, Alsace, FR, 2014 + Croissant
An Alsatian white with its signature richness and slight spice is one of the better croissant companions you'll find β the butter in the laminate and the weight of the wine hit the same frequency.

Persephone is the rare bakery where you might linger over a glass of Burgundy and not feel like you've made a weird choice. If you're in Jackson Hole and want a low-key wine moment with exceptional bread, this is the move.
