You walk into a Parisian-ish bakery in the Wyoming aspens expecting espresso and a croissant, and then you notice there's actually a wine list. It's three bottles deep. We respect the audacity.
Three wines is not a wine program — it's a wine opinion, and Persephone's opinion is actually pretty good. A Cava from Catalunya, a French rosé, and a Bordeaux Blanc from Château Haut Lavigne covering Sauvignon Blanc and Sémillon — whoever put this together was not phoning it in. There are no Malbecs, no Californian Chardonnays, no safe crowd-pleasers. It's a small list that leans confidently European and quietly says 'we thought about this.' The obvious gaps are everything else: no reds, no depth, no exploration beyond three pours — but for a bakery café in Wilson, Wyoming, this is punching well above its weight class.
Everything on the list is by the glass, which is either charming or the only option depending on your perspective. Three pours, no bottle program — you're getting what you get, and the rotation doesn't appear to change much. That said, all three are genuinely interesting choices that earn their spot on a café menu.
Suriol 'Azimut' Cava Brut Nature — Unknown
A Brut Nature Cava from Catalunya — zero dosage, bone dry, made with intention — is not what most bakeries are pouring. At café prices, this is the move. Order it with anything.
Château Haut Lavigne Sauvignon Blanc/Semillon
Most people see 'Bordeaux' and think big red. This Sauvignon Blanc-Sémillon blend is the kind of white that makes you reconsider the whole region — textured, food-friendly, and completely overlooked by the table that just ordered sparkling water.
Les Grandes Vignes Rosé
It's fine. It's French rosé. It'll taste like every other French rosé you've had on a café patio. Nothing wrong with it, but when your list is only three bottles, the Cava and the Bordeaux Blanc are more interesting calls.
Suriol 'Azimut' Cava Brut Nature + Frangipane Tart
Brut Nature Cava has the acidity and the bubbles to cut through the almond-butter richness of a frangipane without overpowering it. It's a classic pastry-and-bubbles move that works every time.

Persephone West Bank has no business having a wine list this considered for a bakery café, and yet here we are. If you're on the West Bank and you want a glass of something European and thoughtful with your lunch, this tiny three-bottle program quietly delivers.
