First Impression
Walk into TEN and the wine list reads like a California greatest hits album — Caymus, Silver Oak, Opus One, all the heavy hitters accounted for. It's a confident, polished list that knows exactly what its clientele wants. No surprises, but no embarrassments either.
Selection Deep Dive
The 100-150 bottle list leans hard into California, and Josh Rockvam — the sommelier on staff — has clearly curated with intention. Stag's Leap Cab, Duckhorn Merlot, Rombauer Chardonnay, Jordan — these are all legitimate producers, not just trophy labels slapped on a page. The weakness is range: if you're looking for Burgundy depth, Rhône exploration, or anything from the Southern Hemisphere, you're largely out of luck. This is a room for people who know what they love and want the best version of it.
By the Glass
With 12-20 by-the-glass options, TEN gives you real flexibility before committing to a bottle. We'd expect the glass program to rotate around the California core — Chardonnay, Cab, probably a Merlot pour — which works well for a crowd that's here for bison ribs and a good glass of red. We'd love to see more adventurous pours make the cut.
Jordan Winery Cabernet Sauvignon — $35-$50 per bottle (estimated entry tier)
Jordan consistently punches above its price point — structured, elegant, and food-friendly in a way that Caymus and Silver Oak often aren't. It's the quiet pro on this list.
Duckhorn Vineyards Merlot
Everyone's reaching for the Cab, and Duckhorn's Merlot keeps sitting there doing its job better than most people realize. Napa Merlot at this level is genuinely underrated, and it's a natural match for the bison short ribs.
Opus One
It's a trophy bottle at trophy pricing, and restaurants rarely mark it fairly. Unless someone else is paying, the money is better spent elsewhere on this list.
Stag's Leap Wine Cellars Cabernet Sauvignon + Slow Braised Bison Short Ribs
Stag's Leap brings enough dark fruit and structure to stand up to braised bison without the oak hammer that Silver Oak sometimes delivers. It's the Goldilocks Cab for a rich, slow-cooked dish.
✔️ The Bottom Line
TEN is the best California Cab list in Montana, full stop — and having a sommelier like Josh on the floor in Billings is genuinely rare. It plays it safe with variety and the markups aren't going to shock you into joy, but the bones are solid and the Wine Spectator credential is earned.
