Walking into The Republic, the wine list feels like it means business โ€” 300-plus selections in a college town is a statement, not an accident. Order it before the ribeye arrives.

Caymus is on every steakhouse list in America for a reason โ€” people know the name and order it on autopilot. That demand means it's almost never a good value, and at a restaurant with Silver Oak, Paul Hobbs, and Jordan all available, there are better Cabs at every price point. Skip the reflex pick.

Sassicaia + Prime dry-aged ribeye

Sassicaia's structured tannins and dark fruit cut right through the fat on a dry-aged ribeye without overwhelming it โ€” it's a Tuscan wine built for red meat, and the char and mineral notes on both sides amplify each other. This is the splurge pairing that justifies the whole night.
