Wingman Metrics
Walk in expecting a wine list as bold as the Western-supper-club energy, and the list hands you something more modest — a short parade of familiar names anchored in Napa and Sonoma with a nod to Texas High Plains. It's not offensive, but for a full-service steakhouse with live music and prime rib on the menu, we were hoping for more ambition in the bottle selection. The vibe promises a lot; the wine list cashes in a little less.
The list sits somewhere between 40 and 80 bottles, leaning hard on crowd-pleasing California reds and safe international whites with occasional Texas High Plains representation — which at least shows some regional pride. The Saddleback Cellars appearance (spotlighted in a wine dinner hosted with Reed Beverage) hints at a team that can curate when they try, but that effort hasn't fully translated into the everyday list. There's no serious depth in Old World options, no interesting outliers to reward curious drinkers, and the whole thing reads like a program built to avoid complaints rather than inspire orders. Gaps are real: no compelling Burgundy, no Rhône, no interesting Spanish or Italian to match the kitchen's beef-forward menu.
The by-the-glass program runs 8 to 16 options depending on the night, which is a reasonable count for a supper club. What's less reasonable is the markup math — pours are priced in a way that makes ordering a bottle feel like the only sensible move. Rotation doesn't appear to be a priority, so don't expect anything surprising on the stem.
A&J Bubbles — $33
At 65% over retail, it's the least painful markup on the list — and bubbles with a slider or the French onion soup is a genuinely good call.
Saddleback Cellars
Most people here will grab whatever California Cab they recognize, but if Saddleback Cellars is available beyond the wine dinner format, it's a Napa producer with real pedigree and more personality than the safe-bet labels crowding this list.
Jeeper Grand Rose
At $70 on a $25 retail bottle, this is a 180% markup on a rosé that isn't rare, special, or hard to find. Order anything else.
Saddleback Cellars + Prime Rib
Napa Cabernet and a fat slice of prime rib is practically a Texas commandment — Saddleback has the structure to stand up to the beef without getting lost in the au jus.
❌ The Bottom Line
The Western Horseman Club is a legitimately fun night out, but the wine list is along for the ride rather than adding to it — steep markups and a safe-plays-only selection mean you're better off leaning into the cocktail menu or being very selective about what you order. Come for the prime rib and the honky-tonk; don't come for the wine program.
