Walking into a Kimpton hotel restaurant, you brace for the usual airport-lounge wine list — safe bottles jacked up to fund the lobby renovation. Tre Rivali mostly defies that expectation. The Mediterranean focus feels intentional, and 150-plus bottles with a sommelier on staff signals someone actually cares about what's in those racks.
The list leans hard into Italy, California, and France, which fits the kitchen's wood-fired, pasta-forward personality. It's not a deep-cellar situation, but it's a genuinely solid range for a hotel dining room in Milwaukee — you're not just staring at Meiomi and Josh Cellars. The Mediterranean throughline gives the list coherence that a lot of restaurant lists lack. That said, don't expect to go hunting for obscure Etna Rosso or Jura whites — this is curated for a broad audience, and it plays to the crowd more than it challenges it.
Twenty to thirty by-the-glass options is legitimately impressive, and the rotating Wednesday program means the BTG list isn't fully calcified. The Chandon Brut Rosé at $15 a glass is a crowd-pleaser move — it's fine, but at roughly $20 retail per bottle you're paying a steep premium for the pour. Shop smarter and look further down the list.
Chandon Brut Rosé Napa Valley CA — $15/glass
Not a steal by any measure, but if you're splitting bubbles by the glass on a Wednesday half-price night, this drops to a reasonable entry point for a celebratory pour without committing to a full bottle.
Collet Brut Aÿ-Champagne FR
Most tables here are ordering California bubbles and moving on. Collet is a cooperative house out of Aÿ with serious Champagne credentials that flies under the radar — it's not Krug, but it's the real thing. If you're going to pay Champagne prices, at least drink actual Champagne.
Mumm Napa Brut Prestige Napa CA
A $25 retail bottle hitting $60 on the list is a 140% markup on a wine that was never meant to carry that kind of weight. Mumm Napa is a perfectly pleasant party sparkling — it's not a $60 bottle anywhere else on earth. Pass.
Collet Brut Aÿ-Champagne FR + Charcuterie
Salt, fat, acid. The Collet's bright acidity and fine bubbles cut through cured meats and rich charcuterie boards in a way that California bubbles at this price point just don't. It's the move if you're starting with a spread at the bar.
Wednesday — Half-priced bottles from the Mediterranean wine portfolio — rotating selection that includes bold reds, crisp whites, and rosé. Best reason to visit on a weeknight.
✔️ The Bottom Line
Tre Rivali is a hotel wine list doing more than it has to — a real sommelier, a focused Mediterranean selection, and a Wednesday half-price night that makes this genuinely worth a mid-week reservation. Just go in knowing the markups on the bubbles are working hard to cover that Kimpton overhead.
