The list at Trio reads like a confident greatest-hits compilation — California heavyweights, a nod to Burgundy, some Pacific Northwest representation. It's well-curated for a mountain-town bistro feeding tourists and locals alike, but don't come expecting discovery. What you see is exactly what you get.
Sixty to ninety selections covers enough ground to satisfy most tables: California Cabs and Chards anchor the list, with Burgundy represented by Louis Jadot and the Rhône Valley adding some texture. The Pacific Northwest shows up and earns its spot. What's missing is any real adventurousness — no skin-contact wines, no obscure appellations, no small producers trying something interesting. It's a list designed to minimize friction, not spark conversation.
Twelve to eighteen by-the-glass options is genuinely solid for a Jackson Hole bistro, and the range covers the expected bases — white, red, rosé (yes, Whispering Angel is on there). Rotation appears minimal; this looks like a set-and-forget glass program rather than one that gets refreshed with the season. Still, the breadth means most people at the table will find something that works.
Louis Jadot Burgundy — $55
In a sea of California markups, a proper Burgundy from a reliable négociant like Jadot represents the best QPR on this list — especially if you're eating the elk. Real terroir at a price that doesn't require a second mortgage.
Duckhorn Vineyards Merlot
Everyone reaches for the Cab, but Duckhorn built its reputation on Merlot and it still delivers — structured, fruit-forward, and more food-friendly than most of what surrounds it on this list. It gets overlooked every time someone reflexively orders red.
Whispering Angel Rosé
Whispering Angel is fine wine — at retail. Here in Jackson Hole, you're paying a resort-town premium on top of an already inflated brand premium. The bottle has become a status prop at this point, and the price reflects that more than the juice inside.
Rombauer Chardonnay + Salmon entrée
Rombauer's signature buttery, vanilla-laced Chardonnay is almost custom-built for a well-prepared salmon — the richness mirrors the fish's fat content and the oak doesn't fight it. It's a crowd-pleasing pairing that actually has logic behind it.

Trio won't give you a wine epiphany, but it won't embarrass you either — it's a reliable, competent list for a lively bistro in an expensive mountain town. Send a friend here for dinner, just remind them to skip the rosé and order the Burgundy.
