Walking into VINCA, you get the sense that someone here actually cares about the list โ not because it's sprawling or showy, but because the prices feel honest in a way that most Pearl Street spots don't bother with. A Modern European wine bar on Boulder's main drag could easily coast on tourist margins. VINCA doesn't.
Selection Deep Dive
The list leans European in spirit but isn't afraid to pull in New World producers when they earn their spot โ Evening Land's Eola-Amity Chardonnay and Rancho Las Hermanas Sta. Rita Hills Pinot Noir are legitimate picks, not just California filler. Italian representation comes via Antinori's Villa Toscana and Michele Chiarlo's Barbera d'Asti, giving the list some regional credibility to match the kitchen's European focus. What's missing is depth โ this feels like a tightly curated starting point rather than a fully built-out cellar, and there are gaps in the Old World coverage you'd hope to see from a restaurant billing itself as European-inspired. But the selections that are here show intent, and that counts for something.

By-the-glass specifics aren't fully documented, but given the price points sampled โ all landing between $25 and $31 โ this looks like a list built for glass pours rather than bottle-service theater.
