The wine list at Wasabi Hinkaku doesn't try to be anything it's not — this is a casual downtown sushi spot, and the wine program dresses the part. You're looking at familiar faces: Kim Crawford, Josh Cellars, Kendall-Jackson — the grocery store aisle made into a menu. What saves it is the pricing, which is almost shockingly reasonable for a restaurant.
The list clocks in at 15-25 bottles with a California-forward lean and zero pretension. There's no deep-cut Burgundy hiding here, no pet-nat tucked in the back — just approachable, crowd-pleasing labels that most diners recognize on sight. The regional focus skips Japan entirely despite the cuisine, which is a missed opportunity; even a single sake or Japanese import would have added some personality. If you came hoping to geek out over producers, you'll be eating edamame and moving on.
Six to ten pours by the glass, priced between $8 and $15, covering the basics: a white, a bubbly, something sweet, a red. Rotation appears minimal — this reads as a set-and-forget program rather than something that gets refreshed seasonally. But at these prices, you're not paying for curation; you're paying for a glass of something cold with your spicy tuna roll.

Retails for $13 and they're charging you less than that. A crisp, citrusy pour that actually makes sense next to sushi, and you'd pay $14-16 for this at most comparable spots. Take the win.
Josh Cellars Cabernet Sauvignon
Most people reflexively skip red wine at a sushi restaurant, and we get it. But at $10 — below retail — this is a serviceable pour for anyone at the table who just wants a Cab. Don't overthink it.

The single-serve mini bottle is priced at $9 against a $6 retail — a 50% markup that stands out like a sore thumb on an otherwise steal-tier list. Just order a full glass of something else.
