Walk into a casino resort steakhouse in Arlington, Washington and you might expect the wine list to be an afterthought — a few Kendall-Jacksons and a token Champagne. Whiskey Prime surprises you. The list has real bones, anchored by a California-heavy lineup that earns its Wine Spectator Award of Excellence without embarrassing itself.
This is a California Cabernet fan's comfort zone and not much else. Caymus, Jordan, Silver Oak, and Stag's Leap Cabernet Sauvignons are all present, which tells you exactly who this list is built for — steak-and-Cab loyalists who know what they want and don't need convincing. On the white side, Rombauer, Chalk Hill, and Far Niente cover the Chardonnay bases competently. The gap is everywhere outside California: if you want Burgundy, Barolo, or anything with a hint of adventure, you're out of luck.
