The room feels legitimately elegant for the setting, and the list leans hard into its Santa Ynez Valley backyard in a way that feels intentional rather than lazy. It's a casino steakhouse that actually did its homework on local wine.
Selection Deep Dive
The list reads like a curated tour of the Santa Ynez Valley AVA, anchored by producers who know this land better than almost anyone. Beckmen Vineyards, Stolpman Vineyards, Brewer-Clifton, and Gainey Vineyard all show up, which tells you someone put real thought into this beyond just calling a Sysco rep. Fess Parker and Zaca Mesa round out the local lineup with more recognizable names for guests who aren't deep into the region. It's not a sprawling cellar, but the focus on local terroir is refreshing and gives the list a coherent identity you don't get at most casino dining rooms.

Rusack doesn't get the same hype as Stolpman or Brewer-Clifton, but they're making serious wine from Ballard Canyon fruit. Most guests here are going to reach for the bigger names โ skip the crowd and go for Rusack if it's on the current list.
Fess Parker Winery
Fess Parker is a perfectly fine winery, but it's also the most tourist-facing label on this list and almost certainly the most marked-up relative to what you can find at retail. The wine is good; the value at casino fine dining prices is not.
Stolpman Vineyards + Prime Steak
Stolpman's Ballard Canyon Syrah is structured, meaty, and built for exactly this situation. The pepper and dark fruit character plays off a well-seared prime cut in a way that makes the pairing feel obvious in the best possible sense.
