First Impression
You're driving up toward Pikes Peak and suddenly there's a creekside restaurant dedicated entirely to Colorado wine โ and somehow that feels both obvious and like a total surprise. The list reads like a love letter to the Grand Valley and Western Slope, with producers most people outside the state have never heard of. It's a mission-driven list, and that alone earns it serious respect.
Selection Deep Dive
Everything here is Colorado, full stop โ and that's a genuine commitment, not a gimmick. Carlson Vineyards out of Palisade anchors the list with their fruit-forward Western Slope reds and whites, while Two Rivers Winery brings some structure and range, and Garfield Estates fills in the gaps with wines that punch above their regional reputation. The list is tighter than a big-city wine bar โ probably 50 to 150 bottles โ but the curation is intentional and it covers the state's strongest appellations. Gaps exist where you'd expect them: no international benchmarks for comparison, no real deep cellar play, but that's kind of the point.
By the Glass
With 20 to 40 pours available by the glass, this is one of the more generous BTG programs you'll find at a spot this size โ and at $8 to $16 a pour, it's priced to encourage exploration, not intimidation. The variety across producers means you can run a legitimate Colorado tasting flight without committing to a full bottle, which is exactly how you want to drink here.

Carlson is one of Colorado's most consistent producers and getting their Palisade wines by the glass in the $10-$12 range is a genuine deal โ these bottles retail higher than most people expect.
Garfield Estates Wine
Garfield Estates flies under the radar even among Colorado wine drinkers โ most people walk past it for the bigger names, but their wines show real terroir character from the Palisade area and reward the curious.
Two Rivers Winery Selection (by the bottle)
Two Rivers is fine, but if you're buying a full bottle here, your money goes further exploring the lesser-known producers on the list โ Two Rivers has wide retail distribution, so you're not getting anything you couldn't find elsewhere.
Carlson Vineyards Palisade Red + Buffalo Burger
Colorado bison with a Colorado red is as local as it gets โ the fruit-forward, approachable tannins in Carlson's Palisade reds won't fight the gamey richness of buffalo, they'll ride alongside it.
