First Impression
The wine list at Water & Wine lands with some serious weight โ this isn't a restaurant that threw together a few Chiantis and called it a day. Italy is the clear obsession here, and the depth in Tuscany and Piedmont alone puts most tri-state area wine lists to shame. It's been holding a Wine Spectator Best of Award of Excellence since 2006, and the list backs that up.
Selection Deep Dive
Piedmont is where this list really shows out โ Barolo from Giacomo Conterno, Bruno Giacosa, and Gaja in the same program is genuinely impressive for a suburban New Jersey ristorante. Tuscany keeps pace with Biondi-Santi and Sassicaia sitting alongside Ornellaia and Tignanello, covering the full spectrum from classic Brunello to modern Super Tuscans. The California section doesn't try to compete โ Caymus, Jordan, and Silver Oak show up for the crowd who needs them, and that's fine. The 200-350 bottle range means real breadth without becoming an intimidating phone book.
By the Glass
Sixteen to twenty-four by-the-glass options is a healthy pour program for a spot this focused on bottles, and the Italian backbone carries through even in the glass selections. We'd love to see a bit more rotation and some transparency on what's currently pouring โ the set-and-forget nature of the specials program suggests the glass list doesn't change much. Still, getting access to quality Italian producers by the glass is a win most nights.
Jordan Cabernet Sauvignon โ $65
Jordan consistently overdelivers on the California Cab spectrum โ approachable, crowd-pleasing, and at the lower end of the bottle range here, it's an easy yes for a table that's split between old world and new.
Amarone della Valpolicella
Most tables go straight for the Barolo or a Super Tuscan, but the Amarone on this list deserves serious attention โ rich, structured, and built for slow dining over dishes like Osso Buco. It rarely gets ordered and it should.
Caymus Cabernet Sauvignon
Caymus is fine wine, but it's ubiquitous, heavily allocated, and almost always marked up aggressively at white-tablecloth spots. With Gaja and Giacomo Conterno on the same list, spending your money here feels like ordering a burger at a steakhouse.
Biondi-Santi Brunello di Montalcino + Osso Buco
Classic Brunello with braised veal shank is one of the great combinations in Italian dining โ the wine's firm tannins and earthy, dried-cherry character cut through the richness of the marrow and slow-cooked meat without overwhelming it. Order this together and don't rush it.

Water & Wine is the real deal for Italian wine in central Jersey โ a list anchored by legitimate Piedmont and Tuscany producers that would hold up in any major city. The markups sting a little and there's no dedicated sommelier to guide you, but the bones are excellent and that 2006 Wine Spectator credential isn't an accident.
